MOM CHEF class

So i've been so busy and my blog has been on my mind a lot.I started a cooking class for Mums especially creative meals. you know how kids tend to get bored with meals, especially their school lunch.Kids need those interesting and creative meals to make them look forward to the next meal, Asides they need meals that support their brain health. The first class held 29th November, it really was a fun class where we discussed health benefits of foods for kids, and made certain yummy meals. Some kids came with their mums and totally loved the meals....Now what better evidence do you need to convince you that the kids would love the meals?.A big thank you to those kids. Local rice my way

Rice is a staple in my Country Nigeria, this should encourage versatility in preparing it . One of the tasty recipes I try when im tired of Jollof, fried,coconut rice ,thai rice....name it....is Local Rice. I guess what makes it local is the use of palm oil,locust beans,dry fish, crayfish,basil (Efirin),ewa oloyin(Honey beans). It really does have different versions. I make use of any local fresh ingredient I have at home. Uncooked Rice Palm oil Iru (locust bean) Ewa Oloyin(honey beans) or black eyed beans Dry Fish (washed and de-boned) Onions(sliced) Freshly ground pepper (boiled)-you can do without it if you have dry pepper Basil leaves (Efirin) Beef Stock stock/bouillon cubes Soak the already washed dry fish in hot water, rinse the basil leaves and shred, set aside. Puff puff

Puff puff is an all time favorite Nigerian Snack. Different countries have a recipe with some sort of fried dough, the names are just different, some of them taste just like puffpuff so its like a global recipe in my opinion.  Funny enough ,in the midst of all my cooking escapades, I never went out of my way to make it myself till this year when some of my friends sent me puffpuff pictures,they know themselves,lol. I looked up different ways of doing it as people have different versions, my conclusion is that you become a pro at doing it each time you try. that's my story,with each attempt,I became better at it. my tip is to be observant with each trial and you'll be a puff puff pro soon. Avocado Tomato Grilled Cheese Sandiwch

I came up with this post because it was the last meal I had before going into the delivery room. I stood at the cooker showing my sister how to make a plain grilled cheese sandwich in an open pan. Shortly after eating it, the Baby contractions became stronger.... okay  a Lovely Baby came out some  minutes later. Lol. Back to grilled cheese. Its such an easy breakfast to make and you can fill it with just about anything you like. I made an avocado tomato grilled cheese sandwich. Here's what you need: 1 Avocado, pitted and cut in chunks 1 tomato, diced 1 small can sweet corn slices of light sandwich cheese/light/low fat mozzarella(if you're really watching your weight) some corned beef (optional) Place a slice of bread on the place, add avocado pieces, and corned beef,and a slice of cheese(or half a slice if you would)  place a slice of bread on that and repeat the avocado,corned beef,this time, add tomatoes and sweet corn,and cheese, cover with another...

Plantain Balls/Mosa

Iquo, a great cook i Admire, inspired me to try the mosa,its a snack i look out for on small chop platters.funny enough,its either absent or in very little quantity. finding out I could make it easily is a blessing and I thought id share. What you need 1 very ripe plantain (please avoid using rotten plantain, very ripe plantain is ideal) 1/2 cup of flour (US measuring cup 1 cup of water 1 egg (optional) pinch of powdered pepper pinch of salt 1/2 teaspoon of baking powder Oil for frying Mash the plantain or blend with water, a dd the salt and pepper, the egg (optional) and baking powder. mix the batter well but be careful not to  overmix  the batter. Heat some oil in a non stick pan or pot, drop spoons of the batter in the oil, fry lightly for like 2 minutes on each side. drain on paper towels and serve with a pepper/ginger sauce or eat it just like that.

Cinnamon French toast

One lazy Saturday morning, I decided to have French toast for breakfast, first on my mind was akara( fried bean balls made from ground bean paste),but I wasn't gonna get into all that 'loonng' preparation,so I settled for the toast! By the way,french toast can be eaten as breakfast,brunch or a dessert! The more decadent,the more dessert-ish,lol! I made just one chunky slice so here are my ingredients and how I made it! 1 egg One chunky slice of bread A pinch of salt 1teaspoon cinnamon 1/4 cup of milk A pinch of black pepper or red pepper if you're my Nigerian sister or brother,lol Some raisins Whipped cream (optional) Lets go!
