Chicken Balls

Before I made this snack/meal, I was used to eating meatballs. I thought this would be nice for a change. its pretty easy and you can tweak it to suit your taste buds. You'll need 1 Pound Minced/ground chicken pinch of salt 1 teaspoon black pepper 1 egg, lightly beaten some chopped fresh parsely 1 tablespoon garlic salt 1 tablesppon of soy sauce (optional...if you like the asian twist) 1 teaspoon of crushed ginger  1 small green pepper,finely diced, 1/4 cup of celery finely chopped(optional) Bread crumbs Vegetable oil for frying Lets cook Mix all the ingredients together. be careful not to make it spicy.spicing ground meats can be tricky. when youre done mixing, add about a tablespoon of the breadcrumbs to the mixture to help bind it. and leave the rest for the dredging.  Roll  the chicken balls into the size of a tennis or golf ball ,as you like.roll in breadcrumbs, or dredge in lightly beaten egg before the breadcrumbs if you would.  Fry lightly on e

Christmas Day

So you notice im just blogging about christmas day in February. I had written down my menu for christmas day but we finally travelled to be with family. we had loads of fun. on Christmas eve,my Sister inlaw told me I was gonna do the cooking the next day. pheeew! I was hoping to taste someone else's cooking!She promised to give me the necessary support....lol.... anyways we soon set to work,drew up our list and headed for stores. We had peppersoup-graciously prepared by yours truly's hubby,lol. While my sister in law and I quickly worked on the rest of the menu; The popular jollof rice Grilled chicken Ginger peppered  snails and gizzard  Potato salad and wrapped up with a very rich ,fruity Christmas cake baked by my older sister-in-law. The table was jammed with food as you can tell already!lol! Hope you enjoyed your Christmas like I did!

Meatloaf!!!

Grilling/Baking is one cheat move for me against frying. yes sometimes,some foods just have to be fried to get that taste.But really,id rather set the timer to the oven and come back to check it when my food is done,than keep coming back to the fryer or pan on the burner flipping fried foods. Asides this reason,its a healthier option to grill or bake compared with Frying. Enough said. this recipe is for making meatloaf,my replacement for meatballs sometimes.  You'll need 1pound minced meat,(16 ounces/2-2.5 cups of minced meat) 1/4 cup bread crumbs, 1egg,lightly beaten parsley(chopped), 1 small onion chopped spices(black pepper,curry,garlic salt,mixed herbs,stock cubes), 1/3 cup of ketchup! save some for spreading on the loaf.  Optional : 1/4 cup chopped red bell pepper, garlic salt (its one of my favourite spices, brings out a lovely flavour) , 1/2 cup of milk Directions: Mix all ingredients together like you would meatballs,(be careful with the spices,you'll
