This is my first blog post in 2020, should I say, having an Instagram account has boycotted my blogging? It takes conscious effort to blog when most followers are so active on Instagram and engage directly with posts, but I wont forget my cute blog. Love you forever bloggie, for the times you were great company during all my maternity leave experiences.
Its been a lockdown period globally because of Covid-19 and I trust you are all keeping safe. Remember, God is our refuge, our very present help in time of need. This too shall pass. This lockdown came with all sorts of cravings for my family members, starting with me,the head chef,haha.
Today's snack was prepared within few minutes. You can name it plantain fritters. I think I have a very old blogpost called plantain puffs which is very similar to what i made today.
So just before you throw away your overripe plantain, think about this recipe and make a sweet treat. Now there's a very traditional recipe called mosa...it calls for yeast most times, like I said,this one is an easy and quick treat that doesn't require waiting time,for the dough to rise. It does look like Akara (a Nigerian breakfast/street food made from frying spiced beans paste)
Ingredients (all measurements done with US measuring cups, you are welcome to convert to any metric that you would be using)
- 2 overripe plantains ( i threw in one stray banana i found on the counter top)
- 1 cup+1/3 cup of flour
- 1/3 cup of sugar
- 1/2 tablespoon baking powder
- 1/2 tablespoon cinnamon, you can use a pinch of nutmeg if you dont have cinnamon
- 1/2 a teaspoon grated ginger(optional)
- 1/2 cup water.
This made 20 balls/fritters.
- In a bowl, mash your plantains with a fork, add the dry ingredients and then the water to mix. Mix everything in.
- Heat a frying pan and add your choice of oil for frying.
- scoop the batter into the oil ,frying in batches. Cook the fritters evenly by flipping it to the other side. Fritters do not really have to be a perfect ball shape and do not require any particular skill to drop it in hot oil,so relax,hehehehe.
- Drain on paper towels and serve warm with some tea!

I tried these with almond flour and coconut sugar. They burnt a bit. Might be because almond flour doesn’t have much gluten in it so i had to have the oil quite hot or they’d fall apart. I used grape seed oil. They were nonetheless quite good. I’ll try again and maybe try another oil. Thanks for the recipe.
