Easy Banana,peanut butter Oat bake

One of the easiest breakfast recipes I recommend is, the oat bake. Initially i'd bake it in a loaf pan and realize i should have made more. These days, because my children are older and eat more,baking it in a small loaf pan doesn't just work,i use my big oval casserole dish to bake a huge batch and we just slice them out.  Just a few words about the nutrient profile of oats: Rich in Zinc,Manganese, Selenium, Magnesium,Phosphorus.They also contain both soluble and insoluble fibre. It supports cognitive development and is recommended for children.



I use normal oats, not the oat flour, I guess you can use your oat flour or mill your oats into flour with a food processor. You can also mix the batter in a blender like I have done for years. This always works.In the past , I took orders to bake these for people who don't have time to bake or who don't really have the baking flair,and the review was always good. These are especially good for people children on a gluten free diet. The recipe is also good for adults who want to eat healthy.

Anyways, this time, I did not use the blender, I just mixed it in a bowl. One of the ways to make cooking easier for mums/caregivers, is to get acquainted to their ovens,, it really helps with making some dishes. potato bake, pasta bake, fruit crumbles, roasted plantain (Boli), you name it, Oven to the rescue.

Okay lets bake now

  • 3 cups of oat                                                                
    yumyum we love raisins in my home
  • 1 tablespoon baking powder
  • 2 eggs
  • 1/4 cup coconut oil or melted butter
  • 2 large bananas,mashed
  • 1/2 cup sugar or dates powder.
  • 1 teaspoon cinnamon
  • 1 tablespoon peanut butter
  • handful of raisins
  • pinch of salt
  • milk ( I used a mini Sachet of powdered milk which is about 2 tablespoons)
  • 1 and half cups of water

You really can just mix in all the ingredients together because it is not a cake but to feel safe, you can put the mashed bananas in a bowl,add the eggs ,oil and mix it then pour into all the dry ingredients and raisins. Oil a baking dish and pour it in. Top with raisins, some pieces of bananas abd nuts if you have them. You can put little drops of peanut butter on the batter, on one side, some chocolate spread on another side of the batter and pop it into the oven to bake. 

 I baked in a preheated oven at 200 degrees for 40 minutes or go in with a skewer or toothpick to see if it comes out dry. if the stick is wet and sticky, your oatbake may need a little more time in the oven.

Allow to cool cut in squares or triangle slices, you can slather some peanut butter,chocolate spread or jam on it. We eat them served with hot chocolate drink, and tea for the adults. There's usually enough to snack on by midday before lunch is ready. its a double win.

Puff puff

Puff puff is an all time favorite Nigerian Snack. Different countries have a recipe with some sort of fried dough, the names are just different, some of them taste just like puffpuff so its like a global recipe in my opinion.  Funny enough ,in the midst of all my cooking escapades, I never went out of my way to make it myself till this year when some of my friends sent me puffpuff pictures,they know themselves,lol. Preserving Green leafy Vegetables by freezing

Today, I am writing about preserving green leafy vegetables. Sometimes, people are unsure if  freezing of leaves reduce the freshness when prepared. After experimenting, I suggest that leaves can be frozen till you're ready to cook. I used Ewedu and Spinach for the latest experiment. I cant resist giving you a quick background on Ewedu Leaf before I discuss its preservation. Ewedu leaf ,for those who dont kow it ,is the local name for the Genus Corchorus .
