deep fried coconut raisin dough

So Last night, we all wanted a snack to indulge in. I thought about puffpuff and a yummy dip but - didn't have all that waiting time for the yeast to act.

I looked in my baking items shelf,the fridge and here's what we got. Still looking for a perfect name for it,but it just might be deep fried coconut raisin dough. The outcome was just awesome, the kids couldn't get enough of it also.

You'll need

  • 2 cups plain flour
  • 2 level teaspoons baking powder
  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon ginger powder
  • 1/2 cup coconut milk
  • 2 cups raisins/ dried fruits/currant
  • A little water to mix



Every piece and bite gives you yummy raisins.



  1.   Mix all the dry ingredients together: flour,baking powder,cinnamon powder,ginger powder,sugar. Add the coconut milk and a little water,mix till you get a consistency that is not too thick nor runny. (refer to 'dessert style mosa' for picture showing batter  thickness).    
  2. Heat some oil in a frying pot or deep pan. Test the oil for hotness by dropping tiny batter into it. if it bubbles and rises to the top. Its hot enough.
  3. Drop tablespoons full of dough into the oil and fry for 2 minutes,turning it over occasionally. Scoop them out and drain on paper towels. Serve with jam,chocolate dip or nutella.

Puff puff

Puff puff is an all time favorite Nigerian Snack. Different countries have a recipe with some sort of fried dough, the names are just different, some of them taste just like puffpuff so its like a global recipe in my opinion.  Funny enough ,in the midst of all my cooking escapades, I never went out of my way to make it myself till this year when some of my friends sent me puffpuff pictures,they know themselves,lol. I looked up different ways of doing it as people have different versions, my conclusion is that you become a pro at doing it each time you try. that's my story,with each attempt,I became better at it. my tip is to be observant with each trial and you'll be a puff puff pro soon. Preserving Green leafy Vegetables by freezing

Today, I am writing about preserving green leafy vegetables. Sometimes, people are unsure if  freezing of leaves reduce the freshness when prepared. After experimenting, I suggest that leaves can be frozen till you're ready to cook. I used Ewedu and Spinach for the latest experiment.
